We have so many pumpkins at our house! We buy them mostly for the seeds, but we also make pumpkin puree with the pumpkin flesh. What to do with leftover pumpkin puree? What to do?! From smoothies, cookies, pumpkin pies, and cakes…we’ve almost done it all in the sweet treat department!
I wanted to make a quick pumpkin treat, as I had a bit of pumpkin puree left in the fridge. I really didn’t want to turn on the oven, and I wanted something raw.
So I played in the kitchen for a bit- and I came up with this super easy raw pumpkin ball recipe. Great to bring to a Halloween party this weekend-healthy whole ingredients, and it doesn’t require any baking..Bonus!
The only thing I would substitute next time would be dates instead of the coconut sugar, to pump up the fibre. Keep in mind though, that coconut sugar is low glycemic and doesn’t spike your blood sugar like regular sugar does. This is way better than what they will be handing out to our kids this weekend!
Here’s the recipe to these delicious pumpkin pie bites…
Raw Pumpkin Pie Bites
1 1/4 cup rolled oats (ground to a flour) 1/2 tsp ground cinnamon
1/2 tsp ground all spice
1/8 tsp ground ginger
Pink of Himalayan salt
2 tbsp organic butter melted
1/3 cup pumpkin purée
1/2 tsp pure vanilla extract
1/2 cup coconut sugar
Mix oat flour, cinnamon, allspice, ginger, and salt in a small bowl. In a medium bowl, stir together the butter, pumpkin, vanilla and coconut sugar. Add in the dry mixture, stirring until incorporated. Cover the dough and chill in the freezer for 20 mins.
Line a plate with parchment paper. Roll the dough into 15 little balls, use 2 teaspoons of dough for each ball ( or you can make them to your liking) Place on the parchement paper and refrigerate until ready to eat. Store in the refrigerator in an air-tight container for up to one week.
