Pumpkin Pineapple Smoothie

Its 4 days until thanksgiving, and today I am sharing with you a real sweet treat to add to your thanksgiving festivities.

I never really thought of putting pineapple and pumpkin together until I had a craving for a pumpkin smoothie, and I had this pineapple just staring at me on the counter. So I decided that I would merge the two and make a beautiful creation.

The two pair really well together, and the pineapple really gives it a sweet and scrumptious taste. It’s definitely a delicious combination, and its very quick and simple to whip up.  This smoothie is dairy free, refined sugar free, and gluten free.  I hope you have a wonderful weekend with family and festivities!

Recipe

Ingredients:

Serves 2

1 cup fresh sweet  pineapple ( chopped)

5 Tablespoons of pumpkin puree

4 pitted dates

1-2 tablespoons of fresh squeezed lemon juice ( half a lemon)

½  teaspoon of pure vanilla extract

1/2 teaspoon of cinnamon

1/2 teaspoon of allspice

1/3 cup of coconut milk ( the thick white cream at the top of the can)

1/2  cup of almond milk

A handful of ice

Directions:

  1. Combine all ingredients except the ice in a high speed blender and blend until smooth.
  2. Add almond milk or coconut milk as needed for desired thickness.
  3. Add the ice once everything is blended for  nice chill drink.
  4. Add a pinch of cinnamon on top.
  5. Enjoy!

 

Note: To make this recipe nut free use 1 cup of coconut milk.
